Gloucester Old Spot pigs
The Iron Down herd of Gloucester Old Spot pigs is mostly run in grass paddocks. This old orchard breed is renowned for the flavour of its meat and benefits from an outdoor existence. The sow, weaner and fattener ration includes a mix of wheat, barley and lupins grown on the farm.
In wet, cold winter months finishing pigs are run in strawed yards, and their summer quarters include 'wallows' so pigs can cover themselves in mud to avoid sunburn.
Outdoor rearing, slow growth to maturity and a healthy ration all combine to provide a unique taste to finished joints, hams and sausages that is not found in intensively reared stock.
Iron Down Sheep
The early lambing flock is based on an old native breed, the Polled Dorset which is naturally suited to early lambing and renowned for its high quality, tender and flavoursome meat. For the later lambing flock we chose North Country Mules which are hardy, prolific and have great mothering abilities.
The flock is now also producing mutton, a meat product that is seeing renewed interest from discerning customers. The sheep flock is lambed early and late to provide a steady supply of fat lambs which come off grass and clover leys through summer months and turnips in the winter.
Ewes and their lambs thrive on clover-based leys.
Meat Joint Butchery
The butchery at Iron Down Farm is located in an old stone building which was converted with help from a DEFRA grant to a state-of-the-art cutting room with adjoining chiller. The accent is on minimal stress both in handling animals on the farm and in transportation.
Professional butchers handle all meat cutting work on lambs, beef and pigs which are slaughtered at nearby Witney.
